Chef Guillaume Sparks-Beaulé: Born and raised in Montreal, Chef Guillaume Sparks-Beaulé has been at the helm of Les Deux Gamins kitchen since it opened in 2007. In his early twenties Guillaume realized he wanted to spend his days in the kitchen, and so he changed career direction to train at the world-renowned cooking school, lInstitut de tourisme et dhôtellerie du Québec. Following specialty studies in French cuisine, he was accepted to continue in the prestigious Formation supérieure en cuisine, an exclusive course limited to 16 students from across Quebec. Here, Guillaume was awarded the Françoise-Kayler scholarship for his advanced expertise and unequivocal support of Quebecs local agriculture. The scholarship took him to Valence where he trained at Maison Pic under the three-star, Michelin-approved chef Anne-Sophie Pic. In France, Guillaume perfected his skills as a chef who strikes an appetizing balance between great taste and culinary simplicity with his bistro talents a style of dining that is part and parcel with the social ambiance and relaxed lifestyle of traditional French culture.
